Dr. Riggs serves as an Adjunct Professor of Health & Human Performance at Concordia University, Chicago. Currently, she is a Full Professor at Georgia Southern University.
She earned her Ph.D. in Nutrition (emphasis in biochemistry) at Auburn University, her Master’s Degree from Ball State University (emphasis in community nutrition), and her B.S. in Nutrition and Food Science (emphasis in clinical nutrition) from Indiana University in Bloomington, Indiana. Dr. Riggs is a Registered Dietitian and has 15 years of clinical experience working with a variety of chronic illnesses including, cancer, diabetes, cardiovascular disease, and obesity. She also has experience working with patients suffering with eating disorders as well as working with athletes. Her main research interests are preventative medicine and sports nutrition.
